Crock Pot Creamy Chicken




This is a family favorite and is so super easy to make. Unfortunately I do not know the original source. I got it from a friend on facebook many years ago and have been making it ever since. The recipe calls for it to be served over pasta but we are a rice loving family and serve it over rice instead. For the creamed soup, I use Pacific Natural Foods Organic Cream of Chicken Soup, I order it in bulk on Amazon.


Ingredients
--1 can cream-of-something soup
--1/2 cup chicken broth
--frozen chicken pieces - enough to feed four adults (I use 4 chick. Breasts)
--packet of Italian salad dressing mix (I make my own).
--2 cloves minced garlic
--block of cream cheese (to add later)
--cooked noodles or rice (I use two cups uncooked rice in my rice cooker)

The Directions.

Put everything except for the cream cheese into the crockpot. Cook on low for 6 hours, or until the chicken is cooked through and begins to shred. Shred the chicken with two large forks, and mix in the block of cream cheese. Switch the crock to high and cook for another 30 minutes, or until the cream cheese is fully melted.

Serve over pasta or rice

Daughter's Afghan


I finally finished crocheting my daughter's Afghan / blanket. It only took me like a year of working on it! In the beginning I only did a few squares here and there maybe going even a month without touching it but when I got to the last row around I kind of did a mad rush to finish it. She is only five now but I wanted it big enough she would not outgrow it.

You'll Get Through This --- Max Lucado


     
     So this is kind of a shameless plug for Max Lucado’s Bible study “You’ll Get Through This”.  Usually his studies are not really ones that I am interested in but this one spoke to me and opened my eyes in amazing ways drawing me closer to the Lord at a time I really needed it. We have been going through a really difficult trial the last couple years, sometimes making it hard to have hope and easy to look at tossing in the towel and giving up (not in life but in the situation). We have prayed and cried, and cried out to the Lord, begging for a change in the circumstances, wondering when this situation will end, wondering how much more we can take. I saw the quote in the above picture on a FB post, it jumped out at me and I looked up and ordered the material. This study came along at just the right time. I shared in my timeline posts at the time but wanted to kind of bring those thoughts together in one place.  The good very praiseworthy news is that it does appear there may be a change in our circumstances soon. I am scared to hope that it will happen but need to trust in God’s timing.

     Most of the Bible study revolves around the story of Joseph. Max Lucado pointed out that if it were not for Joseph’s trials and hardships (thrown into a cistern, sold into slavery, jailed) the young coddled, spoiled, rich Joseph in his father’s household could not have become Pharaoh’s right hand man that literally saved nations from starvation and was in a position to bring his family to a protected place, which ultimately saves the lineage of Jesus. From the time Joseph was sold into slavery to the time that he was re-united with his father it was 20+ years. That is a long time to go through trials.  Makes our two years look like not much. I want to cry out to the Lord and have him deliver us from our troubles now, have him bring us up out of the miry clay now, bring us up out of the cistern now. I do not want to consider staying in our troubles indefinitely. However I know and trust in God’s timing, not my own.  In the meantime I will stay prayerful, stay faithful, hold on to hope, draw strength and rest from Him. 

     Max Lucado talks about Joseph being in a deep dark pit, not being able to see his way out. But he did not stay in the pit, God was with him. God was with him, placing him in prominence in Potipher’s household. Then later while in prison he continued to remain faithful, and God was with him showing him kindness and granting him favor with the prison warden. He was able to be in a position to interpret dreams which years later led to him being in a position of authority working for the king, and ultimately reunification with his family. We can see the big picture now piecing all of the events together but Joseph went through a time of suffering during which God was with him and eventually brought him out of.  Lucado states “He gets us “through” the Red Sea, he gets us “through” the fiery furnace, he gets us “through” the storm, He gets us “through” even crucifixion.”  “The boy in the pit became the prince in the palace.” Life in the pit stinks but the God that brought Joseph up and out of the pit is the same God that will see us through. The pit does one thing, it forces us to look upward.

     In a chapter of the study titled “Wait While God Works”, Max Lucado draws attention to Daniel 10 when he mourned, fasted and prayed for 21 days. An angel appeared to him and told him that his words were heard from the first day but the angel was held up in spiritual warfare for those 21 days. While Daniel was waiting steadfastly in prayer, God was working. We may not get the answer we want in the timeline we want it in, but that does not mean that our prayers went unanswered, we continue to pray, fast, focus on God, and wait while He works. Obviously this is easier said than done. :)

The following are some other quotes from the book that spoke to me. 

"As for you, you meant evil against me, but God meant it for good, to bring it about that many people should be kept alive, as they are today." Genesis 50:20  Satan is the source of this evil, but God comes in and takes the actions of evil and reweaves them for good. God will use this mess that you are going through right now. It may take some time but God does not waste this time. He will use this time to train and develop us into the person he needs to accomplish his will. He will use this time to teach us something that he wants us to know.” 

“What is the one thing you still have that no one can take? The answer is God’s destiny. No one can touch it. They can take a lot of things from you but no one can take your destiny. You are God’s child. He chose you. No one can take that from you. He placed you on this planet, in this generation, with these skills, in the place where you live, for a purpose. You are his child, you have to hang on to that. I am still God’s child. I may pass through a tough season, but I am his for eternity, he is still on the throne.” 

"Rather than ask "God, why?" ask, "God, what?" What can I learn from this experience? Rather than ask God to change our circumstances, ask Him to use your circumstances to change you. Life is a required course. Might as well do your best to pass it."

We may have had some difficult times of late and after awhile, it started to get harder and harder to get through it and "soldier on", and I found myself focusing on wanting deliverance of those circumstances. However it is not part of God's plan right now and this study has really helped in growing me spiritually, changing my perspective and teaching me to be content. 
 
The following are some verses that have been helping me. This list is not all inclusive, remember this trial has been going on for awhile and there are soooo many verses that have helped us at different times during this period.

I know what it is to be in need, and I know what it is to have plenty. I have learned the secret of being content in any and every situation, whether well fed or hungry, whether living in plenty or in want.  I can do all this through him who gives me strength.  Phillipians 4:12,13

Then Moses summoned Joshua and said to him in the presence of all Israel, “Be strong and courageous, for you must go with this people into the land that the Lord swore to their ancestors to give them, and you must divide it among them as their inheritance. The Lord himself goes before you and will be with you; he will never leave you nor forsake you. Do not be afraid; do not be discouraged.” Deuteronomy 31:7,8

Sing the praises of the Lord, you his faithful people; praise his holy name. For his anger lasts only a moment, but his favor lasts a lifetime; weeping may stay for the night, but rejoicing comes in the morning. Psalm 30:4,5

Living in the Now


Last week sometime the Old Testament reading from my devotional came out of Numbers 11, and I have been thinking about it all week.  The Israelites had left Egypt and were at this point wandering around in the desert. God had been providing them food in the form of manna, however the Israelites were getting tired of the manna.  They were grumbling and complaining and desiring a variety of food, specifically meat. They were looking back on their time in Egypt with fondness desiring to be back in that place again. Had they forgotten they were slaves in Egypt and actually in a pretty bad situation when living there? Could they not see they were traveling with God and that he was providing for their needs to include food that had all the nutrients they needed? They had the promise of the Promised Land ahead of them, "a land flowing with milk and honey." Why would they want to go backwards, back to a terrible time?
   I have read this passage numerous times throughout my life and heard multiples sermons on this topic. The reason that this struck me so much this time is that I feel like right now I am similar to those Israelites. We have some difficult things going on right now and they have been going on long enough that we really want out of the situation. We keep trying to forge ahead, see the positive, keep our passion and fervor for ministry, focus on our hope in Christ etc, but with the negative things going on we seem to continually get to the point that we feel like we are just done. We have cried out to God asking for relief, asking for change in our circumstances. Yet the circumstances have not changed and I have to admit we have gotten to the point of grumbling and complaining, feeling just beat down. We look back on a particular time with great fondness, wishing we were back in those circumstances, longing for that time. We see God's promises ahead of us, we see the light at the end of the tunnel, yet we still continue to want our current circumstances to change. So as you can imagine this passage kind of struck home.  While the time we look back on fondly was not a terrible time, it was not all sunshine and lollipops either. In fact it was during the time I had cancer, but we look back and think if only our circumstances could be the same, minus my cancer. I wonder if the Israelites looked back at there time in Egypt wishing their circumstances could be the same minus the slavery. We start to look at other people's situations with envy.
    While reading this passage I really felt like God was showing me that while this is a difficult and quite hurtful time, there are so many ways that He is caring for us and providing for our needs. We have so many blessings. I am one of God's chosen people and a daughter of the King. Our family is amazing and the military family relationships that we have forged God has truly used to help sustain us through these times. We live in an incredible place and my husband has a job that provides us so much more than we could ask for. I have great medical care and wonderful doctors here. We have a church family that is so loving and caring and passion for the Lord that blows me away. I am so excited to be spending family camp with our church at Bellows this weekend. And the ministry opportunities abound all around us. Between, chapel, church, PWOC, our unit, and our neighborhood, there is no shortage of ways that we can share the love of Christ and serve our Lord. I needed kind of an adjustment in my spirit and I am thankful that I have the Holy Spirit to help guide me when I get off track. As Psalm 13 says, I need to trust in His mercy, and ask Him to grant my heart joy in His salvation. I need to remember that my hope is in Christ, not our circumstances, this earth is not my home. My home is with Christ. While I am here on earth however, I need to live in the now. I need to live for Christ in these circumstances, learn the lessons He has for me now and use the opportunities he is giving me in the now.

Focus Amidst the Chaos


When I saw this picture I thought it fit this post perfectly.
Isn't this what life seems like sometimes? 

      I so needed my devotional reading this morning. Usually when I do not have a specific Bible Study that I am doing I follow the daily readings laid out in The Word Among Us. It is a Catholic devotional magazine based on the daily mass readings. No I am not Catholic but I picked it up one day in a waiting room a few years ago in Alaska and liked it. I like how it has an Old Testament reading for the day and a New Testament reading and most of the time like the daily meditation. God has really used it to prompt me to dive in deeper on multiple occasions.

      Anyways, today the New Testament reading was Matthew 14:22-36, about Jesus walking on water to his disciples' boat during high winds and waves.  

 “Lord, if it’s you,” Peter replied, “tell me to come to you on the water.”
 “Come,” he said.
Then Peter got down out of the boat, walked on the water and came toward Jesus. 30 But when he saw the wind, he was afraid and, beginning to sink, cried out, “Lord, save me!”  Matthew 14:28-30

     Then when discussing this passage the devotional says "As Peter looked at Jesus, the storm seemed to fade away. All that mattered was that Jesus was there, defying the laws of gravity and banishing fear. In that moment, Peter's heart was lifted above the waves, and he stepped out of the boat. Jesus became the source of his confidence and security, not the boat. Even when he turned from Jesus' gaze and began to sink, he called to Jesus for help, and he was saved."

     Again, I really needed that today. We have a lot going on in our life right now, some of it circumstances that like the waves we cannot control. It is so easy to lose our focus and look down, taking our eyes off of Jesus. However that is when we start to sink. If we keep our eyes on Jesus those circumstances tend to fade out and get blurry, we rise above our circumstances with renewed faith, and ability to keep moving forward even through the storm. When we do start to sink He is there to pull us back to Him when we call out to Him.  When I read this passage this morning I felt like Jesus was reaching out His hand to me, calling me to keep my gaze on Him and stay above the craziness going on in our lives right now. I felt like He was reminding me where my focus needs to be and reminding me of His power.

Simple Homemade Vapor Rub



There are tons of recipes out there on the internet for homemade vapor rub, I am sure most of them work great. This is a simple, quick one that works well for us. It was one of the first things I made with essential oils and helped to convince me of the benefits of essential oils. :) To read the long version of the story you can read here Essential Oils. The short version is, it was late at night, my son had a chest cold and was having bad asthma attacks before we knew he had asthma, my hubby was out of town and well you get the picture. My friend told me to make some vapor rub with essential oils, rub it on his chest and his feet and put socks on. It helped a lot to soothe and support his respiratory system and I have used it several times since.  There are other recipes that are more complicated and some that call for beeswax but since this works for us, I saw no need to do something different. We keep this in our room where the A/C stays on most of the time and so the coconut oil stays pretty well solidified. Again because this is being rubbed into the skin I would suggest a higher end essential oil like doTerra, Native American Nutritionals, Young Living or Mountain Rose Herbs

Ingredients for kids and elderly
1/2 cup coconut oil
8 drops peppermint essential oil
8 drops eucalyptus essential oil
8 drops lavender essential oil

Ingredients for older kids and adults
1/2 cup coconut oil
15 drops peppermint essential oil
15 drops eucalyptus essential oil
15 drops lavender essential oil

Mix all the ingredient together and you are ready to go.

If you want it thicker consistency you can whip the coconut butter with some shea butter or you can melt some beeswax and mix it in. I do not find it necessary but some do.

You can use other essential oils as well, like lemon, tea tree, rosemary, pine, basil, chamomile, orange and others. If you do add more EOs however, you will need to adjust the number of drops you put in as it needs to stay safely diluted. There is a good chart / print out for diluting here Dilution Chart.

DIY Homemade Deodorant

 
 

As part of my journey to start to reduce unneeded chemicals in our lives I decided to have a go at making my own deodorant. While my cancer was not breast cancer, now that I have had cancer, I am more susceptible to getting cancer again and I figured the less chemicals near my lymph nodes and breasts the better, plus it is more cost effective. I came across this blog and recipe about a year ago, added it to my favorites, determined do make it.   http://thehumbledhomemaker.com/2012/10/natural-homemade-deodorant-recipe.html   I just recently made it for the first time. :) Nothing like procrastinating. I did switch to using store bought natural deodorant a long time ago but making my own felt like the natural next step. Now that I have made it, I really wish I had done it sooner. It was soooo easy!! At the bottom of the post you can read my assessment and tweaks I might make next time.

Ingredients
2 heaping tablespoons beeswax pellets
1 tbsp shea butter
5 tablespoons coconut oil
1/4 cup cornstarch or arrowroot powder (for sensitive skin)
1/4 cup aluminum free baking soda
10-15 drops lavender oil
10-15 drops tea tree oil
10-15 drops of other essential oil of your choice (I chose Ylang Ylang because it is supposed to help with fibromyalgia
3-4 new or used (cleaned out) deodorant tubes twisted all the way back down. When I did this, it made 3 regular sized and two travel sized.

I got the beeswax pellets at our local craft store but you can get them on Amazon, Mountain Rose Herbs, or Aromatics International. The shea butter I got off of Amazon but you can also get it at Aromatics International or Mountain Rose Herbs, probably at your local health food store as well. The aluminum free baking soda I got at our local health food store Down To Earth but you can also order it from Mountain Rose Herbs. For the essential oils, you can choose which brand you want. Since it is being applied / rubbed into the skin, I suggest a higher quality brand. I recommend doTerra, Native American Nutritionals, Young Living or Mountain Rose Herbs.  For the deodorant tubes, you can get them on Amazon, possibly your local health food store or local craft store. For me where we live, it was actually more cost effective for me to buy the cheapest deodorant at the grocery store (93 cents each), and cleaned them out.

Directions

1. Melt beeswax in a double boiler. If you do not have a double boiler you can put them in a glass bowl over a pot of boiling water.


2. Add shea butter and coconut oil and heat until just melted, stirring occasionally.



3. Remove from heat and add cornstarch and baking soda. Stir until smooth.



4. Add essential oils and mix well



5. Pour into old deodorant tubes and let sit a few hours before adding the tops. You will want to fill them until they seem to almost overflow because they will fall down a good bit once cooled.  You can see from my picture, my tube was a tad lumpy, I stirred it up better before pouring the rest.



So there you  have it, a quick and easy way to make your own deodorant! I am excited to have finally done this!

After using it for a little while, here is my assessment.
Does it work?
Yes, it works. :) I do not have to apply it any more often than I did the store bought natural deodorant. I apply it 2 -3 times a day but again I did that with the store bought stuff. I sweat a lot. I work out hard almost everyday, soaking through my work out clothes, I am in menopause so have periodic hot flashes causing me to perspire, and I just naturally sweat a lot. So 2-3 times a day may sound like a lot for you but for me it is normal. I hiked Diamond Head just this weekend with the family and had no complaints. :)
Would you make it again and if so what changes would you make?

Absolutely I would make it again. The only complaint I had was that it did not set up quite as well as I would have liked, my guess is because we live in the tropics. Not much stays in a solidified state in my pantry because of the warmth. So I think once it is time for me to make it again I will probably add a little more beeswax, maybe 3 heaping tablespoons rather than 2 to see if it sets up a little better. I will update this when I do. It still works fine. I keep it in our bedroom where we keep the A/C on and I smear it on with my fingers rather than rubbing the bar on it.

Quinoa with Bell Pepper and Pine Nuts


This dish very much reminds me of couscous dishes I ate growing up in Africa which is probably why I am so drawn to it. In all honestly it could be just as easily made with couscous but I use quinoa because I cannot eat wheat.  I think it is yummy and great for a light lunch and easy to make. Oddly enough when I first came across the recipe it was part of a recipe for stuffed bell pepper and was supposed to be the stuffing but I liked it just as well on its own. This is one of those types of recipes you can add or detract ingredients as you see fit. Like you could easily add some carrots, peas, or green beans.  Not part of the original recipe but I added to it are ginger because in case you have not noticed by now, I love ginger, and I also added mint to it.

Ingredients
1 cup quinoa, bulgar, barley or couscous or grain of choice
2 cups vegetable stock or water
1/2 of a red bell pepper, chopped
2 tablespoons olive oil
1 yellow onion chopped
½ cup chopped celery
2 garlic cloves, minced
2 small fresh hot chiles, seeded and minced (optional)
¼ cup minced fresh parsley
1/4 cup mint (optional, not in original recipe)
ginger chopped (optional, not in original recipe)
1 tablespoon minced fresh dill or 1 teaspoon dried dill
½ teaspoon ground cumin
2 tablespoons fresh lemon juice
¼ cup currants
¼ cup pine nuts
1 teaspoon sugar or natural sweetener
Freshly ground pepper
 
Directions
Cook quinoa and 2 cups vegetable stock according to package directions. Set aside to cool. Heat the oil in a large skillet over medium heat. Add the onion, celery, garlic, chiles, and chopped bell pepper and cook 5 minutes or until softened. Add parsley, mint (optional), ginger (optional), dill, cumin, lemon juice, pine nuts, currants, sugar, quinoa, and salt and pepper to taste, and mix well.
