When our oven went out again recently (three or four times so far, our landlord is sending someone out again today to try to fix it), I decided to get creative. I make most of our family's treats and sweets from scratch and after not having any for awhile because of the oven I got on the internet to come up with some options. My solution that time was brownie waffles. Basically you just take some brownie batter and pour them in the waffle maker just like you would with regular waffles. You can use a regular brownie mix or make it from scratch. I did find that I had to cook them for a little less time than regular waffles. The kids loved them and when the oven went out again my oldest asked for brownie waffles. Here is a recipe I like to use for brownies and is Feingold approved.
2 Squares unsweetened chocolate (I usually just use Baker's)
1/3 cup butter (I usually use Tillamook or Land O Lakes)
2 eggs
1 cup sugar
1 tsp. vanilla
2/3 cup flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup chopped nuts (optional) I don't like nuts in my brownies so I leave this out
Semi-sweet chocolate chips as desired (I use Ghiradelli because it uses real vanilla as opposed to artificial vanillin)
Conventional oven - Preheat to 350 degrees
Melt chocolate and butter.
Beat eggs, beat in sugar; add chocolate mixture and vanilla. Combine flour, baking powder and salt; blend into above mixture; stir in nuts and chocolate chips if desired. Turn batter into greased 8"x8" pan and bake for 25 minutes; cool before cutting.
For brownie waffles I added close to a tablespoon of oil maybe a little less and about a tablespoon of water to make the batter not as thick and easier to spread in the waffle maker, follow your waffle maker's instructions, waffle maker may need to be oiled, pour the same amount of brownie batter as you would waffle batter onto waffle maker (mine is about 2/3 cup), close waffle maker and cook for just a little less time than waffles. I usually have to let it cool a little before being able to take them out without crumbling. And voila you have brownie waffles. I did not do this but you might like to sprinkle some powdered sugar over them.
